Kitchen CUT allows you to create and publish digital menus that display allergen data and dietary suitability, enabling guests to filter dishes based on their dietary needs. This ensures both compliance and clarity for consumers while saving your team time managing allergen updates.


Creating a Filterable Digital Menu

You can create an online version of your menu that includes allergen and dietary information. Once published, guests can filter this menu by:

  • The 14 legally required allergens

  • Custom allergens created in your system

  • Suitability (e.g. vegan, vegetarian, gluten-free)

These digital menus can be hosted as standalone pages or embedded into your website. This provides your guests with real-time, accurate dietary information at their fingertips.


Allergen Management in Kitchen CUT

Kitchen CUT includes the 14 required allergens out-of-the-box with simple, clear icons. You can also:

  • Upload your own allergen icons to match your brand

  • Create custom allergens specific to your operation

  • Assign allergens manually or automatically

Automatic Allergen Import

Allergen data can be auto-assigned via the F+B Gateway if provided by your supplier. These assignments are visible when reviewing products in the system and apply to:

  • Products

  • Recipes

  • Online Menus

Once approved by the Kitchen CUT user, allergen updates are instant and system-wide.


‘Suitable For’ Filters

In addition to allergens, you can also classify dishes based on dietary or lifestyle suitability, such as:

  • Vegetarian

  • Vegan

  • Halal

  • Gluten-Free

  • Nut-Free

These categories are easily added and managed from within your recipes. Once assigned, your digital menu allows guests to quickly filter for relevant options.


Nutritional Information Integration

If you enable Nutritional Information, Kitchen CUT uses trusted databases:

  • 📘 McCance & Widdowson’s

  • 📗 USDA National Nutrient Database

This ensures guests and teams have accurate calorie and nutrient data alongside allergen and suitability indicators.


🚨 Enabling the Feature

The Online Menus module is part of the wider E-Commerce functionality. If you wish to enable digital menu publishing, allergen filtering, or ‘Suitable For’ menus, please speak to your Client Services Manager.

This functionality also enhances the F+B To Go solution.
