How to Find & Replace

This article explains how to replace ingredients across all your recipes.

Overview: 
Find & Replace allows you to substitute ingredients in bulk across all of your recipes. This can be a vital tool to save time in the event of product changes. The system will automatically find the subrecipes and recipes in which a given product is currently used, and replace with your chosen new product.

Steps:

- Go to Suppliers > Products > Find & Replace

- Search for and select a product you want to replace, this will show as the 'CHANGE PRODUCT'. This is the product you want to remove from recipes.

- Enter the 'TO PRODUCT'. This is the product you want to replace it with.

- Enter the 'Conversion Factor'. This is the amount of the TO PRODUCT that equates to the displayed quantity of the CHANGE PRODUCT. You can see how this is going to work in the 'Result' below. Check out some examples:


1. The 'Haku Vodka 70cl' is being replaced with the 'Ciroc Vodka 40% 1LTR'. The conversion factor has been entered as 0.7. This shows in the Result field that 70cl equates to 0.7l. 

2. The 'AA Sirloin 8oz', which has units of '1 each' is being replaced with the 'K Japanese Wagyu Sirloin', which is measured in kgs. The Conversion Ration is therefore entered as 0.227, as 1each of the 8oz sirloin, equates to 0.227kg (8oz = 227g).

3. The 'Flour All Purpose' is being replaced with 'Flour - Gluten Free'. This is a simple swap as both are measured in grams. The 'Flour All Purpose' has a unit size of 3500g, so therefore the conversion factor is entered as 3500, so that the replacement ratio is 1:1.

4. The 'Eggs Medium x15 Dozen' are being replaced with 'Egg Whole Pasteurised Liquid'. In this case we are replacing fresh eggs with eggs from a carton. You need to enter the egg white equivalent of 180 fresh eggs. Which in this case is 9000g. This means for each individual whole egg currently in a recipe, it'll be replaced with 50g of the carton egg.

 

FAQs:
Q: Can I use Find & Replace across unit types?
A: Yes, as in the above examples, it doesn't matter that 2 products have completely different unit types. When you enter the "Conversion Factor" this establishes the ratio at which they will be substituted in recipes.

Q: What is a 'Conversion Factor'?
A: The Conversion Factor is used to tell the system how the units of 1 product relate to the units of the replacement product, to make sure when the Find & Replace happens, you end up with the right quantities of the new product in your recipes.

Q: Can I use Find & Replace to bulk change the qty of an ingredient used across all recipes?
A: Yes, you can achieve this by selecting the same product for both the CHANGE PRODUCT and TO PRODUCT fields. For instance, if you need to reduce the quantity of Anchovies used in your recipes due to a price increase, you can easily do so. In this scenario, you would set it up so that for every 1000g of Anchovies currently in your recipes, it will be replaced with 800g of the same product. This adjustment results in a 20% reduction in the amount of Anchovies used across all your recipes:
